
Makes
10 small blueberry pancakes
Ingredients
800g Granulated sugar
200g Self raising flour
1 tsp Baking powder
300ml Milk
125g Blueberries
Butter (for the pan)
A pinch of salt
1.) Mix together all of the dry ingredients: the flour, baking powder, sugar and a pinch of salt.
2.) In a separate bowl whisk the egg with the milk.
3.) Make a well in the dry ingredients and gradually mix in the milk and egg mixture.
4.) Carefully stir in the blueberries.
5.) Heat a pan and add a bit of butter. Once melted use a large spoon (or three tables spoons) to place the thick batter into the pan.
6.) Cook for about 3 minutes on one side until you see bubbles on the surface, then flip it over.
7.) Serve when both sides are golden brown and the centre is cooked, then drizzle on some golden syrup and enjoy!
I am a sucker for proper blueberry pancakes! I love how you've done this post, those pancakes look as appetising as they would in photos.
